Tex-Mex Rice (red spicy rice)

8 cups water

3 Tablespoons chili powder *

1 Tablespoon tomato powder**

2 Tablespoon pumpkin powder***

2 teaspoon salt

2 cups rice

2 Tablespoons Oil


Bring water to a boil while adding the tomato powder, pumpkin powder and seasonings stir well. And add rice then top with oil. The oil keeps the rice from foaming up and over flowing. Cover. Let rice boil 10-15 minutes the remove the heat. Let rest for 20-30 minutes. Serve.

Makes 6 cups rice.


* chili powder. I have a recipe for it here. (Opens in a new tab)

** if you don't have tomato powder use 2 Tablespoons of tomato paste. And a ½ cup less water. Add after rice is cooked

*** if you don't have pumpkin powder use 1 cup pumpkin puree about a half can. And 1 cup less water. Add after rice is cooked.
