Simple Bread

Writer's picture: The Victorian Prepper The Victorian Prepper

5 cups flour

1 Tablespoon sugar

1 Tablespoon yeast

1 teaspoon salt

¼ cup oil

2 cups water

Mix together beginning with 4 cups flour and adding in more to make a smooth dough. Knead this just a few turns. It's a good bread if you have trouble kneading or stiff arms. Let it raise 2 times, punch down after 30 minutes. Form into buns or loaves of bread or pizza, 🍕 this is a universal dough. Let raise again then, Bake at 350° for 20-25 minutes. (More toppings on the pizza take more time in the oven.)

Many years (before 2004) ago I found this recipe and I started to have success with bread making. The trick to no kneading is to double raise the dough.

Now trust me... I don't usually have time for all that raising when it's lunchtime and the children want pizza. I mix and smash it into pizza pans throw sauce and toppings at it and place in the hot oven. But the best pizza, nice, thick, soft crust, I let the dough raise at least once after it's on the pizza pan (before the toppings)

I took these buns to Thanksgiving dinner at the hall, there was a lot of people at Thanksgiving dinner. I brought about 50 buns and they disappeared so quickly.

My dad got a blue ribbon at the county fair using this recipe.
