Just Fruit Jam / Fruit Spread

1 cup dehydrated fruit pieces

1 cup fruit juice


Over night or for 8 hours. Soak dehydrated fruit pieces in no sugar added fruit juice. Pineapple juice does a fine job but any sweet juice will do. If you have the convenience of the modern bullet blender use it for the process of soaking and mashing. Otherwise you should be certain the fruit is minced thoroughly before soaking. This makes a fast and healthy fruit paste in which to spread upon bread rolls or biscuits. This makes a nice sugar free filling for baked donuts. Thin down to make a sugar free sweet sauce for pastries or cakes.


In the picture, I used dehydrated apricots and apple juice that I made from juicing the sweet apples from my apple tree.


I let this sit over night in a cool place for about 8 hours. Then I blended it up in 30 seconds. If you don't have a blender chop the dehydrated fruit very fine before soaking. Then after 8 hours take the back of a spoon and mash the fruit into the juice against the side of the bowl. You will actually get a nicer jam with chunks of fruit in it.



I have listed a few fruit below, that will work for this recipe, but definitely think outside this list and experiment to find a fruit or combination that suits your tastes.

Fruit:

Apples

Apricots

Pineapple

Strawberries

Dates

Figs


Juices:

Apple juice

Pineapple juice

Peach

Mango

Anything naturally sweet and liquid that will soak into the dehydrated fruit will work.


The sweeter the fruit and juice the more jam like this will be.
