2 -3 large overly ripe bananas (1 1/2 cup)
1/3 cup sour cream
2 large eggs
1 teaspoon vanilla
1 teaspoon nutmeg
2 cups flour
1 cup sugar
2 teaspoons baking soda
1/2 teaspoon salt
3 Tablespoons butter (room temperature)
3/4-1 cup walnuts
1 Tablespoon lemon juice or vinegar or 2 Tablespoons orange juice.
Mix together the bananas, sour cream, eggs, vanilla, and nutmeg, then add in the flour, sugar, baking soda, salt, butter and walnuts mix well and stir in lemon juice it will fizz up and foam and the batter will become liquid. Pour into a buttered 9×5 bread pan and bake in a moderate oven (at 350°) until a pick comes out clean. About 30-45 minutes.
