Cantaloupe Jam - Summer in a jar

Cantaloupe jam

10 cups diced cantaloupe

3⅓ cups sugar

¼ cup lemon juice

¼ teaspoon salt

1 teaspoon vanilla


Cut, peel and dice the cantaloupe however you do it. Then put it in a pan, put an inch of water on the cantaloupe turn on the burner and stand there stirring it. Because in 5 seconds it will burn. Not the end of the world. But it will caramelize the sugars and turn it a caramel color. Stir often but Do not mash the cantaloupe at this point just heat it up to remove the liquid. When there is a lot of liquid and the cantaloupe is kind of coming together, floating on top, strain off the liquid. Let it drain a bit. Then put it back in the pan. Add the sugar and salt (the salt is very optional) cook this mixture while mashing the cantaloupe. Add the lemon juice and vanilla boil a bit til the liquid is thick on the spoon. Then pour into jars and put lids on. Makes about 4 jelly jars (10 oz
